Pea and Gammon Risotto

This pea and gammon risotto is a delightful combination of creamy Arborio rice, savory gammon, and vibrant peas. It's a comforting dish perfect for any occasion, whether for a cozy night in or entertaining guests.

Ingredients:

  • 300g Arborio rice

  • 200g diced gammon

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup frozen peas

  • 1 liter chicken or vegetable broth

  • 50g grated Parmesan cheese

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

Heat olive oil in a large pan over medium heat


Add diced gammon and cook until browned


Add chopped onion and minced garlic, saut until softened


Stir in Arborio rice and cook for 2 minutes


Gradually add the broth, stirring frequently, until rice is cooked and creamy, about 20 minutes


Stir in frozen peas and cook for an additional 2-3 minutes


Season with salt and pepper to taste


Remove from heat and stir in grated Parmesan cheese


Serve hot, garnished with extra Parmesan if desired
